Marinated carrots with Arbequina tapenade

(it is also very tasty made with eggplant or zucchini)

Peel carrots and cut into slices about one centimeter thick. Grill the carrots very slowly until they start to brown and become slightly soft.

Reserve until it cools in a container that after we can keep in the fridge.


For the maridate.
Prepare lemon juice and add the same amount of Modena vinegar. Add two tablespoons of Arbequina tapenade, salt and oil. Mix gently to bind all ingredients.

Cover the slices of carrot with the marriage and allow cooling in the refrigerator. We should leave it repose at least 6 hours. If you can prepare from one day to another, the better.
